Recipe of the Month - Green Papaya Salad

Green Papaya Salad

 

Ingredients:

½ green papaya, peeled and sliced

1 shallot, finely sliced

½ cup bean sprouts

1 small carrot, peeled and cut into thin strips

1 bunch coriander, roughly chopped

½ bunch Vietnamese balm leaves, roughly chopped

3 tablespoons peanuts, roasted and crushed

 

Dressing:

3 tablespoons sugar

2 ½ tablespoons lime juice

1 ½ tablespoon fish sauce

2 garlic cloves, finely chopped

1 long red chill, deseeded and thinly sliced

 

Directions:

1. Peel and finely slice the green papaya and carrot, then place them in cold water for five minutes to separate the strands and wash off any of the sticky milk from green papaya

2. Drain well and place in a bowl with the remaining salad ingredients

3. To make the dressing place in a bowl with sugar and lime juice in a small bowl and whisk until the sugar has dissolved.

4. Add the remaining dressing ingredients

5. Pour dressing onto the salad and gently toss.

6. Server immediately
